ROSTO (Roey & Steve’s Olives) is a family owned & run company bringing you fresh first cold pressed Australian extra virgin olive oil (EVOO), at a ‘splosh it around’® price. Being a family business, we have a passion that only personal involvement can bring…we’re crazy about our oil!

Our Upper Hunter Valley (Merriwa) property is home to a 50,000 tree grove. We have carefully selected the best olive tree varieties from Italy, Spain & Greece and blend to produce a balanced oil. We press our olives at our grove to ensure freshness and minimal handling.


What is Extra Virgin Olive Oil?
It’s all about the treatment of the olive. If it is harvested at the right time & quickly first cold pressed, the oil will be fresh & unspoilt – extra virgin. Our olive press is on the farm (unlike most) which ensures our plump olives remain unscathed.
If the olive is not treated properly the olive oil has to be refined (like most vegetable & peanut oils). If the olive oil is labelled ‘pure’, ‘ordinary’, ‘light’ or ‘pomace’, these lack the flavour & all the health benefits of extra virgin olive oil.

2007- 2008 Harvest Wrap
Harvest conditions were perfect with no early frosts. Our 18.5 tonne straddle harvester (The Colossus) worked brilliantly and our Pierialisi Olive Press kept up with the harvester so that all the fruit was 'cold pressed' and the oil was is the settling tanks within five hours of picking, hence, easily qualifying as Extra Virgin Olive Oil (EVOO).

ROSTO has again selected two excellent blended oils this year - 'Mellow' being an all purpose EVOO and 'Extra Oomph' being a stronger flavoured oil, having more fruitiness but still in balance with bitterness (which gives a clean palate) and pepperiness (which balances the fruitiness).

ROSTO 'Mellow' EVOO is a well balanced EVOO, slightly sweeter than last year with fresh fruity aromas not unlike bananas. Gentle pepperiness and bitterness ensure a fresh clean finish. 

ROSTO 'Extra Oomph' EVOO has excellent fruity aromas of banana with hints of floral and almond complexity. Good early bitterness and a solid peppery finish ensure a clean palate.


ROSTO Kalamata Olives
Our Australian Kalamata olives are plump and full of flavour, making them the perfect addition to long lazy summer lunches or delicious nibbles to accompany drinks on warm summer evenings. They can add a splash of colour to your summer salads or jazz up your favourite eats.  

Here are some great marinade ideas: 

Marinated Olives with Garlic, Lemon and Rosemary

Splosh ROSTO Australian Extra Virgin Olive Oil, a squeeze of lemon and some lemon chunks, a couple of garlic cloves and a couple of sprigs of rosemary to drained ROSTO Kalamata olives.  Leave for half an hour and serve.

Marinated Olives with Garlic and Chilli

Prep time: 10 minutes
Standing time: 1 hour

350g ROSTO Kalamata olives, drained
1 tablespoon red wine vinegar
1 tablespoon ROSTO extra virgin olive oil
2 garlic cloves, finely chopped
1-2 hot red chillies, chopped
Handful fresh basil, torn

Combine all ingredients and stand at room temperature for 1 hour.  Serve.


Marinated Olives with Citrus and Fennel

Serves 4
Prep time: 15 minutes
Standing time: 1 hour

350g ROSTO Kalamata olives, drained
Rind of 1 orange, cut into strips
Rind of 1 lemon, cut into strips
3 garlic cloves, crushed
¼ cup fennel seeds, crushed
ROSTO extra virgin olive oil, to cover

Place olives, orange and lemon rinds, garlic, fennel seeds and ground black pepper to taste in a bowl and combine.  Place in a clean jar, pour in enough oil to cover and stand in a cool place for 1 hour.  Serve.


Marinated Olives with Roasted Peppers and Vinegar

Serves 4
Prep time: 15 minutes
Standing time: 1 hour

350g ROSTO Kalamata olives, drained and lightly crushed
2 garlic cloves, crushed
Few sprigs oregano
2 Roasted peppers from a jar, drained and cubed
2 tablespoons white wine vinegar
ROSTO extra virgin olive oil, to cover

Place olives, garlic, oregano, peppers, vinegar and ground black pepper to taste in a bowl and combine.  Place in a clean jar , pour in enough oil to cover and stand in a cool place for 1 hour.  Serve.
